- 2 tablespoons olive oil
- 1 massive onion, diced
- 4 stalks celery, diced
- 3 medium carrots, diced
- 1 teaspoon kosher salt
- 2 cloves garlic, diced
- 2 tablespoons smoked paprika
- 2 tablespoons floor cumin
- 1 1/2 tablespoons floor coriander
- 1 teaspoon dried oregano
- 2 tablespoons chili powder
- 1 can (6 ounces) tomato paste
- 2 quarts low-sodium hen or vegetable inventory
- 1 quart water
- 1 pound lentils
Garnishes (non-obligatory):
- 1/2 cup bitter cream
- 1/4 cup radishes, lower into matchsticks
- 1/2 cup freshly chopped cilantro
- 1/2 cup finely chopped onions
- 1 cup crumbled queso fresco
- Drain beets; cube and put aside. Discard liquid.

- 2 cans (15 ounces every) READ German Potato Salad
- 4 cups shredded rotisserie hen
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon finely floor black pepper
- 3/4 cup shredded sharp cheddar cheese
- 1/4 cup crumbled cooked bacon
- French-fried onions (non-obligatory)
- Preheat oven to 375 F.
