Bruce Kalman, the chef and proprietor of Soulbelly BBQ within the Gateway District in Downtown Las Vegas, reveals a pop-up restaurant dubbed Brown Bagger Sandwich Co. beginning in November at Vegas Test Kitchen, the restaurant incubator subsequent to Fergusons Downtown.
