1 cup every raisins, bread crumbs, and apple juice.
Clear and wash geese nicely. Combine apples, raisins, and bread crumbs. Pour in one-half to three-fourths cup apple juice and blend till moist. Fill geese with apple-raisin combination. Rub geese with slice of onion, salt and pepper. Roast in gradual oven (325 F) breast facet down, for about 2½ to three hours. Baste with remaining apple juice.
Orange Pork Chop Skillet
A favourite grand prize winner of Mrs. Wayne Halverson, of Windsor, 1970.
1 can (6 ounces) frozen orange juice, thawed
2 tablespoons brown sugar
1½ teaspoon floor ginger
¼ teaspoon scorching pepper sauce
Brown chops in butter. Pour off fats. Lower squash in ¾-inch rings; reduce rings in half. Prepare chops and squash in skillet. Mix orange juice, brown sugar, ginger, allspice, and scorching pepper sauce. Pour over pork chops. Simmer, coated, 45 minutes. Baste sometimes throughout cooking. Lower oranges in ¼ inch slices, take away seeds; reduce slices in halves; place on chops for final 5 minutes of cooking.
